I figured I'd show you what I am forcing myself to eat here. And of course, to reassure my mom that I am getting enough to eat. Last night was spaghetti with my homemade meat sauce ("I can't believe I ate the whole thing") so tonight was red curry, Thai style. I never really perfected the recipe back home but tonight it turned out alright. I think the key was to let it simmer for a while and of course, not rushing it because you're so hungry and it's already 10pm. Ironically, I was missing some key ingredients such as lemongrass, kaffer lime leaves, and fish sauce (I substituted it with oyster sauce this time). I couldn't find those items anywhere. Did you know that a head of lettuce is about $2 here? And cheddar cheese is stupidly expensive. Who would have thought that cheap-azzed tacos would be for special occasions only? "I'm having guests tonight so we're having tacos."Tonight's ingredients include: chicken, red pepper, broccoli, and cherry tomatoes (though I prefer the grape variety)
